A Mother’s Love

My mother had a very difficult life. As a survivor of five years in a concentration camp, she lost a husband and child, parents, aunts, uncles, cousins and friends. At one point she was chosen for the gas chamber where her mother, Paula Gans, switched places with her, choosing death in order to preserve the life of her daughter.
After surviving years as a young woman in a concentration camp, witnessing the lives of her family and friends cut short, and seeing the annihilation of any semblance of home, my mother could have lived a life of misery and pain. Instead she picked herself up by the bootstraps and started a new life.
In spite of many hardships, she was a very incredible mother. She committed her life to making mine better. She spent every available hour with me, and as a result, we were very close. As a single mom, (not common in 1960) she provided me with a good life, strong values and a solid education.
As a result of what she had suffered as a young woman my mom's motto was "cherish the sweet things that life affords to you." I reaped the benefits of this motto growing up. My mother made it a priority to concoct various delicious treats to remind us of all the sweetness of life. The following are a sample of the sweet treats we shared throughout our lives together.


Apple Crumble
2 lbs. granny smith apples (cored, peeled, and sliced)
¼ cup apple cider
¾ cups all purpose flour
½ cup sugar
½ cup packed brown sugar
½ tsp. cinnamon
½ tsp. grated nutmeg
½ cup butter
pinch of salt
In a 2-quart casserole, combine apples and cider. Mix flour, sugar, brown sugar, cinnamon, nutmeg, and salt in a medium bowl. Cut butter till crumbly. Spread sugar topping over apples and sprinkle butter crumbles on top. Bake 350 degrees for 40-45 minutes. Serve with ice cream or whipped cream. Makes 4-6 servings.
Parisian Cream
½ lb. nestle chocolate
1 pint heavy cream
Boil these ingredients together Refrigerate for 12 hours. Beat until stiff. Use to fill cream puff, jelly roll or lady finger lined spring form pan.
Spiced Nuts
1 beaten egg white
½ cup sugar
¼ tsp. salt
¼ tsp. cinnamon
¼ tsp. ground cloves
¼ tsp. allspice
1 cup whole pecans or walnuts
Preheat oven to 250 degrees. Mix all ingredients EXCEPT NUTS. Oil finger and dip each nut individually into mixture. Place on greased cookie sheet and bake for 1 hour.
Nana's Cookie Dough Pie Crust
½ cup unsalted butter (makes 2 crusts)
½ cup sugar
2 egg yolks
2 cups flour
This recipe can be doubled. Once divided into balls can be wrapped and frozen.
Combine butter, sugar, and egg yolks. Mix in flour till crumbs begin to form. Mold with hands and break into 2 equal balls (4 if doubled). Press 1 ball in bottom of pie plate. Bake 10 minutes at 400 degrees and fill when cooled. If desired, bake for 5 minutes then fill with fruit (apple, pear, peach, plum) slices and vanilla pudding and bake till fruit is soft.
Lemon Cream (this is a tart dessert)
5 eggs
Juice of 5 lemons
¾ cups sugar
1 pint whipping cream
Cook in double boiler until stiff. Cool. Beat whipping cream until stiff. Fold in cooled lemon mixture. Refrigerate for 12 hours. Can eat as a dessert by itself or fill lady finger lined

Bronia Furst was born in Stanislav, Poland. When she was only nine years old she was separated from her parents and sent to a Concentration Camp.

After the camp was liberated she was placed in an orphanage.

A short time later a Jewish man came into the orphanage looking for his daughter. Since Bronia fit the description of the man’s daughter she was taken to meet him.

Both Bronia and he knew that this man was not her father but she begged him in Yiddish to take her anyway so she could get back to her home.

The man claimed her as his daughter and then put her on a train back to her hometown. When she finally made it to her home town she went looking for the Jewish Market. She was told by a woman that it no longer existed, and she began to cry.

The woman then asked her family name, and she told Bronia that she thought her aunt had survived. The woman took Bronia home, washed her, fed her, and put her to sleep.

The next day she brought the aunt to see Bronia.

But it was not Bronia’s aunt.

It was her mother!

Florida Woman Gives Back What Madoff took

Florida Woman helps Jewish Charities


Among the many victims of Bernard Madoff’s Ponzi scheme were Jewish charities who placed their trust in Madoff to manage their assets so they could continue to provide funding for their charitable work.

The Jewish Community Foundation of Los Angeles lost $18 million and Hadassah lost $90 million. Many others also lost huge sums by placing their trust in “one of their own”, who then betrayed them.

Madoff is in prison today, right where he belongs, but the effects of this scandal have had a devastating impact on Jewish charities throughout the world.

One woman is determined to help.

Holocaust Survivor Cookbook author Joanne Caras, of Port St Lucie, Florida, is donating all of the profits from the sale of her cookbook to charities.

Recently Joanne made a donation to the Carmei Ha’ir Soup Kitchen in Jerusalem

This is our fifth donation to the Soup Kitchen.” Joanne said. “In total we have given them $80,000.

“This past January my husband and I visited the Soup Kitchen. They told us that the lack of donations had forced other Israeli Soup Kitchens to close their doors. But they remained open only because of our cookbook!”

In 2005 Joanne visited Carmei Ha’ir for the first time. She was so impressed that she came home determined to raise money to support them. Carmei Ha’ir serves over 500 meals each day to poor and hungry Israeli’s.

For two years the Caras family worked tirelessly to collect recipes and stories from Holocaust Survivors all over the world. Joanne then compiled them into an unforgettable Holocaust Survivor Cookbook.

“We have sold close to 25,000 cookbooks in a year and a half”, Joanne said. “And we have raised almost $400,000 for Jewish charities. I realize that this is amount does not yet come close to what Madoff took away but we are just getting started!”

Jewish groups such as Hadassah chapters, ORT chapters,Temples, Synagogues, schools, JCC’s, Holocaust Museums, and Jewish Federations are purchasing the cookbook at the wholesale price to sell as a fundraiser for the important work they do.

“Many of these groups have told us that, since the Madoff scandal and now with the world economy sagging they are having a difficult time asking their members to send them money. But the cookbook is something everybody wants to have, and people are willing to pay $36.00 to get one.”

“Our goal is to raise millions for Jewish groups all over the world”, Joanne said. “In total we would like to sell 6 million cookbooks as a tribute to the memory of those Jews who did not survive the Holocaust.”

“We are giving back a tiny piece of what Madoff took.”

This is our fourth donation to the Soup Kitchen.” Joanne said. “In total we have given them $72,000.

“We wanted to make sure that Carmei Ha’ir had enough money to buy food for the upcoming holidays.” Joanne said. “This is a special time for Jewish families and it is important that they have enough food.”

“Earlier this year my husband and I visited the Soup Kitchen. They told us that the world economic crisis had forced other Israeli Soup Kitchens to close their doors. But they remained open only because of our cookbook!”

“I am very proud that our cookbook is now being used to teach Holocaust Studies in public schools in Palm Beach County, Florida and in Cleveland, Ohio.” Joanne said.

“We have touched the hearts of thousands of people.”

“We asked Holocaust Survivors to send us their favorite recipe, photos, and also the story of how they were able to survive the Holocaust”, Joanne says.

“We collected 129 stories from all over the world, including Europe, South America, Australia, Canada, New Zealand, South Africa, Israel, and many US states. Each one is a miracle!”

“In the introduction to our cookbook we ask each person who cooks one of the recipes to also read to their family the story that comes with it. That way, not only will we preserve the recipes, but more importantly we will help to insure that the stories of these brave Survivors will live on for generations to come.”

Cookbooks can be purchased at the retail price for personal use, or they can be purchased in large quantities at the wholesale price by groups who want to sell them to their members as a fundraiser.

Proceeds from every cookbook sold will benefit Carmei Ha’ir.

“Our goal is to raise $1 million for Carmei Ha’ir, and millions more for Jewish groups all over the world”, Joanne said. “In total we would like to sell 6 million cookbooks as a tribute to the memory of those Jews who did not survive the Holocaust.”

“Right now the demand is so overwhelming that we had to order more and more cookbooks from our printer.” Joanne said. “We have shipped cookbooks from Florida to Canada, New York to California, and all over the world.”
